what is best for prcoessing $50-$100k/day? i want to use a 3rd party because it is easy but im not sure i can trust them with this money. not getting paid for up to 14 days on some of these doing 50-100k/day is a lot of risk.
i cant process in the US because it is too much money so I have to go offshore which is fine. rates are not really an issue.
any recommendations?

Depends on business model, processing history, location of the business, amount of transactions etc.
A 3rd party will have trouble to process these amounts as they are basically risking their entire business because of your business model. If they get hit with chargebacks or your business collapses, they are the ones who carry the liability for 180 day worth of sales, which in your case would be around 18 million USD.
I can't imagine any 3rd party processor taking this risk, unless you have bank garantuees or pay an extra reserve and even so, I would personally prefer to have you running through a direct merchant account.
The only possibility I see would be to apply with First Data, they have a special program for high volume merchants doing more than 18 million USD/year and can provide solutions to merchants worldwide. For legal businesses, that is.

It depends very much on your type of business and what your are going to sell. Since you say that you almost don't care about the rates and fees then I believe you are selling some digital services ?

I would think of several processors and partners you can apply with.

Even NY Times best seller does not sell $50-$100k daily so obviously you have additional features to your book ;)
US processors will take such accounts but you need to have business presence in the US with US signing officer and US Corporation.
Even some offshore processors (direct) will take your account and daily payment can be arranged but you need to be financially solid and must have good business plan.
Perhaps you can expand on your business model so members can suggest you some options.

Hmm, not exactly the figures that a 3rd party processing company would like to hear with that kind of volume, especially since the thresholds are 200 Visa cb's and 50 MasterCard cb's a month. Once you trigger these amounts, the ratio must be below 0.5% or the processor gets monitored. If they exceed 1% for 2 consecutive months, they jeopardize their accounts.
If the chargebacks are below 0.5% and the refunds between 3-5% it would be much better.

Check out the gateway 2000charge.com to see what they can recommend as a merchant account and electronic payment gateway. You might even consider piping some transactions through them and the others through your current provider.
