hi,
my registrar gives me the option to edit the Whois info of the owner (me)

now, ALL my data appears there,
phone, address, name, surname...

can I delete everything and only leave the mail?

which is the minimum information I should put in the Whois?

It should all be valid info. If you want privacy. Then purchase privacy from your registrar.

Well. Most people will try to contact you by email. But if your other info is invalid and it gets reported to your registrar, you could lose your domain.

The registrar needs to publish the following information, so you have to provide it:

3.3.1.6 The name and postal address of the Registered Name Holder;

3.3.1.7 The name, postal address, e-mail address, voice telephone number, and (where available) fax number of the technical contact for the Registered Name; and

3.3.1.8 The name, postal address, e-mail address, voice telephone number, and (where available) fax number of the administrative contact for the Registered Name.

Can I change it to fake info, and at the time to renew or transfe, set it back to real again?

You can do whatever you like and run the risk of the fake whois not being reported. But obviously, you wouldn't want to do this with domains you valued.

If you enter fake details, you're at the mercy of someone with a grudge. If you piss someone off and they report you, you stand to lose your domain for providing false details. I wouldn't even consider running a site with this worry in the back of my mind.

You either enter your real details, or you go with a registrar such as Dreamhost that offers free privacy (ie: the domain is registered to their details, and they forward the emails to you).
