I'm currently inquiring around for dedicated servers that come with more than 1 gig of ram (ie: 2 gigs), though based on 3 companies I've inquired, they either don't have such machines, or the offers are a big jump in terms of monthly cost from the <1 gig ones. Is 1 gig ram the threshold of standard servers these days?

Well.. Its usually a motherboard limitation... The lower priced mobo's in low end servers generally don't go beyond 1GB... So hows will have to get more expensive mobo to fit you, so they are going to charge you more...

I'm curious...is it more common for relatively busy sites that require more than 1 gig of ram to resort to a a cluster (ie: 2 or 3) of servers, or one expensive one with lots of ram?

Depends on what the site does...
If say it has a PHP and Mysql backend, yes, 2 servers would help there...
You can have one server optimized for Mysql, and the other for file hosting...
I dont' work in a hosting company or anything, but... I've got a gig of RAM, and was (just for kicks) looking at the pricing for upgrading to 2 GB. It's outrageously expensive, but I can see why. 4x 512 MB DIMMs aren't exactly cheap. (RAM prices don't seem to be "linear" -- they get REALLY expensive in bigger sizes. For example, 1x 1 GB DIMM is usually a LOT more than 4x 256 MB DIMMs.)
On a related note... How do other people refer to the individual 'pieces' of RAM? I keep jumping between "sticks" of RAM, which sounds really primitive, and "DIMM," which sounds really geeky. Most people refer to RAM as a whole, not the individual sticks/DIMMs, so it's hard to find how other people do it...

I use stick, though more frequently, just x megs of ram without reference to how many there are.

Yes and ALOT of places use boards that use the 815 chipset w/ a 512MB ram limitation.

A server with more RAM can consume more bandwith... ;)
