How many support tickets do you get per say 100 customers a day? Just want to know what to expect when my server goes online :)

Depends on the time of client, resller or single domain hosting, how big your knowledge base (FAQ) is, if you have forums where customers can get help from other customers firsts, etc.

I'm setting up user forum and knowledge base. I just want to get some real number from people who've done that.

It really does have no average because it changes a lot. Per day may be zero to 100. Also newbe customers will pester you a lot at first, but when more confident will read your FAQ or even post on your forum. If you need a firm average, with 100 customers, I'd say 5 daily on average - but that is only a guesstimate.

Off-server is best for ticket systems, might be used for forum to, in case your server is down. That is a lesson I learned the hard way ;)
