Currently my store urls are domain.com/category-name/product-name/prod6.html but im planning on moving my store to Viart in the new year who's SEO urls are only one level deep such as domain.com/product or domain.com/product.html.
Is it better to have a 2 level structure such as domain.com/category-name/product.html or the one level deep that Viart has?
Im thinking that the two levels are the best because they include the category name but i have no clue on whether this is true or not.
Your thoughts please :)

Some people say URL's make a difference SEO wise, others are not so sure. Personally I've never seen any proof of any benefit other than to make the URL "readable" by human beings :)
Certainly from an asethtics(?) point of view /catgeoryname/productname/ is nice to have, but I wouldn't lose any sleep if it was just /productname/ :)

Agreed. URL itself doesn't make any difference. It's the page content and external links to the pages that make huge difference. So you change page URLs and then you probably lose all the external links to these pages. It's going to affect your search engine ranks to your site.

Make sure you use Http 301 Permanent redirect. The new page will slowly replace the old link in the search engines.

I think that you have to use google map on your web site first of all, then make sure that you pages have links to the other web pages on your site. If I were you I'd use 2 level structure.

Two level structure is much better, and it is always better to have keywords in your url.
Make sure if a product belongs to more than one category, that it has only one link not two, which will lead to a duplicate content penalty.

I am not an SEO expert nor guru, but I have a lot of experience in developing websites and have read a lot of SEO courses written by guru.
I would say 2 level structure is definitely better than one. When you use something like this /category/product e.g health/anti-aging-cream , SE will give more weight to your site and from user point of view it is better oraganized. Next time you may have something like this health/weightloss, etc as your site grows.
