does anyone have a step by step tutorial on installing cURL with OpenSSL on a VPS with a WHM cpanel?

If I remember correctly I think you can install from Update Apache in WHM.
Just go to "Update Apache" in WHM, click on "Load Prior Config", then select the module from there

everytime i recheck.. i find that everything i installed isnt checked... is that normal?

You need to click on "Load Prior Config" to see what modules you have installed previously.
