For the TOS:
Make a list of things you don't want people to do
Make a list of things that are illegal or could get you into trouble.
Make a list of things that are insecure or may expose your server to vulnerabilities.
For the Privacy Policy:
Write in a paragraph or so how you plan to use customer information
Write another paragraph about what you won't do with customer information
Add a disclaimer that covers you in case you have to disclose customer information
Sorry to make it sound elementary but, really it is.

Seriously get a lawyer/solictor to draw them up. Will probably cost you a few thousand but it will save your neck in the long run. Even a simple missing full stop can totally screw you.

Take a look at Host Legal (http://www.hostlegal.com). And then once you have everything drawn up, get your counsel to review it to make sure everything in your business plan is covered

You can do them yourself - review other sites and use them as a model. Don't pull their info - but for the most part - in general - tos' are very close to being the same. There are a few modifications to fit your site but the jest of them are the same. I wouldn't pay money to get them done unless you just want to.
(let the WHT bashing begin)

Just an FYI :: I don't want to beat a dead horse - but brother you have some serious spelling issues on the main page of your site that you might want to look into fixing soon.

well that's partly true. The document won't be tailored for your region and that can cause problems down the line.

Scan the forums - read about all the client or other (legal/illegal) problems webhosts are having. Jot them down. This will take some days/weeks of reading and scroll back a few months to say the least.
These are some of the problem that you most likely WILL encounter. Now look at your draft TOS/SLA/AUP/Etc document and see if it covers it.
Once all done, get a decent law student to draft it in the correct legal lingo. Once that is done, go to a law firm with the draft and get it up to mark.
Believe me - you have no idea how much of a lifesaver it can be for you and your company.
