Hi there,
If your clients are in other country, how do you sign contracts with them? I mean for large projects worth more than $2,000.

Fax or mail them the contract, have them sign it and fax it or mail it back. I would check with a lawyer to make sure things in the other country match what it says on the contract though.

Write your contract in English.
First article: This contract is in English Language and by signing this contract both sides aggrees and confirms that they fully understood the contents of this contract.
And somewhere in the contract, you should put another article says that if any conflict occurs between parties, it will be resolved according to your country's law, and your country's court.
You will want to most likely speak to your solictor/lawyer. Also its a good idea to get a sizable deposit (30-50%)
