Is there a dedicated host that will allow you to customize your server to what you want? like speed ram, hd, software ect.?

Most real dedicated server providers allow that.

Could you please clarify what you mean by "real"?
Customized servers are a very nice feature for the customer but sometimes a pain for the host as he will usually try to have a common server base to simplify support. And what if the customer leaves after two months... (of course I am not talking about adding a memory stick or such)

Well, I guess his 'real' means that the company offers system configuration on their web site (ram, hdd, tape, bandwidth, ips etc) not just ready-to-go pre-customized and pre-configured servers to keep down the cost as low as possible.

I mean fully customizable, not just memory and drive space, I mean you choose what to put on it as software also.

If you customize your server, it will probably be more expensive.

If you do leave, what does the host do with the server? Expect a high setup fee or a contract required.
