I am about to register some domain names for my customers using stargate but I was curious to how is it all handled?
can they be the owners even if I register it or do they have to register it and give me access to change DNS stuff?
any of you doing such a thing?

When I've registered domains for others, I've listed them as the domain owners, along with their contact information, then listed myself as the administrative/billing/technical contact.
I haven't done it through Stargate but I imagine it will work fine. The domains will show up in your account and you'll have access to change the information for the domain, but your client can still be listed as the actual domain owner.

You have to use a valid CC to register it. After that, you can change anything you wish.

On a practical level, as things stand now with most registrars, the person who is the administrative contact for a domain name can do what he or she wants with the domain.
