Is there anything to stop me getting a RAQ, not running DNS on it and just using it for subdomains of a website on the other box (where DNS runs)?

Not if you point your DNS of each subdomain (or I suppose you could just wildcard the domain to the IP of the other box) to the other server's IP address (the RaQ).
