only single cpu servers?

For any systems which require multiple CPUs we use the SuperMicro AS1020A-TB chassis which supports 2 processors (so you can have up to 4 cores) and 4 hotswap SATA drives.

Any preference in CPU (Opteron 265/270/275 etc), size of disks or RAID level (1/5/6)?

raid 1 is fine - no preference on cpu - faster better really.
