Are there any packages/tools/etc that can not only give the "normal" webstats, but also indicate the type of connections that the user used in accessing the site, such as T1, modem, etc?

What you're looking for is damn near impossible due to all of the points of failure on the 'Net. You could almost do it using hostnames and a very smart computer, but it's not worth the trouble.
