When setting up the package for our service, I was going through the features that you can enable/disable using the Feature List in WHM. One of the things I realised is that alot of the features I've never actually had any need for, such as Mime Types and Apache Handlers.
So, which of these features do you actually regularly use?

This would totally depend on your target market.
For our premium brand, we actually use rvskin.com theme to disable most of the cpanel icons.. since leaving them would only confuse these customers. (Our premium brand tends to attract people who are not very technically savvy.)
I hate the whm feature manager. It stinks. If you want to manage cpanel features, it's definately worth looking into rvskin.

This is true, you can disable certain features in cPanel according to what you want to offer. For instance if you don't want to have any eCommerce tools in your basic package you can disable osCommerce, and keep it for eCommerce sites and disable other things in your eCommerce packages....rvSkin is very good for doing so as zippy mentioned.
