Do they still allow registration? I wanted all my domains in one place, so I brought like 20 domains over... then they seemed to have disabled registration last year and I have to make new ones with different registrars.
If they do not, why did they disable it? Will it be back?
I noticed they have this other site called ResellOne.net now. Maybe I can transfer them all there instead. It seems to be the same price. Do I have to be a reseller for that?

They stopped registrations last year as a reseller for tucows. I think the resellone.net is under their own credentials

I think you can still register/renew domains under the ev1 brand. I was told to email domains@ev1servers.net to register/renew.

EV1 is in fact still accepting and processing all domain work you need, if you're an existing domains or server rental customer. To the best of my knowledge, they will not be bringing back automated, web-based registration services via the EV1 website. Instead, they're pushing the new Resellone.net domain services.
Of course, this is geared more towards companies that register domains on a regular basis, but the setup fees and pricing tier are pretty good.
However, if you already have an existing domain account with EV1, that you were using before, they WILL still register, transfer, etc. domains for you under that account. You'll just have to make all registrations and transfers manually using the form they have, which can be faxed or e-mailed in for processing.
I will offer you this bit of advice when doing the manual requests with them though, do NOT use the fax option. It takes them FOREVER to process anything sent in that manner, as it's not a real fax. It's a 'virtual' unit...and people seem to forget to check it. However, if you scan in the completed form as requested, and e-mail it in, I've had processing occur literally in minutes.
Anyway, just some advice for you. I hope it helps! As noted above, just e-mail domains@ev1servers.net for help, they're pretty responsive there.

I don't think it's safe emailing credit card details. Very insecure, since when is email SSL'd?
When they asked me to do that to renew the domains I had with them I transfered them elsewhere instead.

You can also phone in your credit card details if you so choose. The forms that you send in do not ask for the COMPLETE CC number, only a partial. This they match with what you have on file with them from prior use. Granted, it's not 100% secure...but what is?
This is also why I've moved my domain business elsewhere. I wasn't too impressed with the bait 'n switch tactic they used launching Resellone, when they said for months on their message boards that something 'new' was in the works for existing customers. Their service has been pretty good IMHO in the past, but this was not fair to their existing clients.
