Still a little new at this so bear with me...

I currently host my domain at "host A". I told "host A" when i began service with them to modify my dns records so that all the e-mail is forward to Everyone.net's servers(so i could provide e-mail service for my users).

I'm now considering a switch fro "host A" to "host B". I would still like to have Everyone.net's services. When I transfer my domain, will those dns settings get transferred with it, or will I have to tell "host B" to modify them again? Will my users be without e-mail for a few days? Any help would be greatly appreciated.

You will have to tell hostb to change them.
Your users will not receive emails at the domain until your new host make the dns changes.

I recommend you first activate the hostb account and tell them making the dns changes before leaving hosta so your so everyone.net service will not be interrumped.

Just realized this -

If i tell "Host B" when I activate my account, and THEN transfer my domain, it'll still take about 1 week for the dns to propagate...so technically the settings are at both hosts...therefore, my users will still receive their e-mail...right?

As long as you get everything set up with HostB (including DNS), wait a day or two, then change the nameservers, there won't be any interruption.

so set up my account with "host b" but don't change my nameserver info to match "host b's" but still tell them to change my mx records? confusing....

Right on. Remember, when you change the nameservers at your registrar, it will shift and start pointing to the new DNS that your new host will be setting up. You want this set up and ready *before* you change the info at the registrar.
