I'm guessing it's the "look and feel" of Plesk. It has a very user-friendly and bright interface, whereas CPanel hasn't had a major update to it's interface in quite some time (ever?).

From my experience they both work just as well... it ust comes down to your personal preference.

As for how to convert CPanel customers to Plesk.... I'll have to leave that for the experts to answer :)
