I was wondering how you people transfer a clients domain when they sign up. I mean if the client already has a domain with its current host.

Hey.
From what I've seen most of them just ask there clients to update there DNS to point to the new servers :) There is really nothing else involved.

But what if the client hasn't registered the domain himself/herself? Then the clients host must change the info for that domain at their registrar. Am I right?

The client, generally, must go to his registrar and modify the DNS records to point to his new host.
