I have a server located in Germany, and most of my domains are registered through Enom.

I know Enom's servers are geographically scattered through the US, but how would I go about using an alternate regsitrar?

If my domains are registered through Enom, and I go to, strictly for example, Register.Com, how would I do that?

And, who would you recommend, based on geographic location and reliability?

do you mean use enom DNS hosting service for other domains not registered by them?
