If you haven't already, you need to report this at cpanel.net.
Which build are you using?

I enabled spam assassin on one of my domains. I then found I couldn't use the hostee mailing list -- every single instance of an alias address bounced back to me because spam assassin had blocked it (presumably because the mailing list doesn't generate an individual To:, it's just a blanket list address). I brought it up with the host but they're a bit useless when it comes to answering trouble tickets.

Your problem should be really easy to fix, however this is not the place to ask for cpanel support. You should email support@cpanel.net or use http://support.cpanel.net

Um, you mean me? I wasn't intending it as a support post, just mentioning it, y'know, in case anyone else had the same experience and they were wondering if it was just them.
I switched S/A off again. I was just curious to see how/if it worked. I didn't consider it essential at the time. *shrug*
