I seem to be asking a lot of questions recently.

I am looking for a way to make all my emails easier to maintain rather than having to download POP from about 10 domains.

What would you recommend as the easiest way to set these up?

All my domains either run Cpanel or Hsphere.

Am I right that I should be playing with these MX files things?

if all these are on say a different server you can use fetchmail. If all the domains are on the same server there are many different ways to do this.

They are all on a few different servers

Why don't you forward all of them to one mailbox? And get all the mesages from there.
