Ok here it goes again i use hostname at the command Shell and is shows for example: yours.yourserver.com so I change it to Mine.MyServer.com using the following:

hostname Mine.MyServer.com

and all is good my hostname is now Mine.MyServer.com

But after a few days it changes back to yours.yourserver.com all on its own, Any Ideas on how this is happening?

Do you have a control panel installed? I can see that happening if so. The control panel is configured with the wrong hostname, and whenever it does a commit on that setting, it modfies your manual settings. Where control panel could even be something simple like linuxconf or webmin.
