Now, as I write this I mean in no uncertain terms that I wish to get out of the business- I love it at the moment!
Though for your average webhost who is still quite small how would you get out of the business?
Would it be a case of simply notifying all customers (who are monthly billed) you will be shutting shop and possibly direct them to someone else who is good? Or what would you do?
I am not thinking about leaving but I was more thinking in the future if I was to expand.

Well, that web host shutting down could always send their customers to me, and receive a month free for the trouble. :D

Personally, I would look for someone to takeover the business completely. Not necessarily the servers that the sites are hosted on, but take over all of your clients. Or at least something like dside443 suggested, and find someone who will give your clients a special deal to transfer.
It would suck for your clients if one day you said "sorry, we're not going to do this anymore, find a new host". Obviously it wouldn't be said in that manner, but you get what I'm saying (I hope).

Also, I think it would be nice to backup all the users files and transfer it to the new server (if there's going to be a server change). It would be very annoying to some users if they had to upload everything again. Make the change as unnoticable as possible.

You can do one of three things...
1- Tell them you are closing and be done with it.
2- Find a new host to recommend.
3- Sell them to a new host.
The important thing for most of us would be to find a host that will take care of them. To get that you need to talk to a few and see what can be offered to them.
