Does anyone know of a script that I can use (free or paid) that I can setup on my server for online text-editing? I have seen plenty of websites with text-editor plugins that allow you to open a file, edit it and save it on the server.

check out htmlarea.

htmlarea is kinda nice but in my experiance is incomplete. Places like: http://www.eznetedit.com/ have further expanded upon it and it works very well.

Another place that has done a GREAT job on it is Spaw.

Its a little bit more then a text editor but with some tweaking (of the settings) you can get it to a pretty basic editor. :)
