I am kinda of new to plesk as well as running mysql. Could someone give some step by step instructions on how to backup 3 domains I am moving to the other server as well as the mysql databases each domain has, I don't want to backup any plesk main settings just the individual domain settings. And then how would a restore the mysql database once I have transfered the domains to the other server.

The settings for each domain, are located in several different tables in MySQL. Your best bet would be to recreate the accounts on the new server, then transfer the data into them. If they have their own DB, then you could simply do a dump of that DB, and restore it on the new server.
