I was wondering if anyone has had experience using the searchfit shopping cart? It is supposed to be "search engine friendly"

Though I dont have specific experience with that shopping cart, I can tell you that Zen Cart (open source) is almost completely SE friendly with their latest 2.1 release. The product is still in beta - but, the amount of SEO work they have done is simply phenominal..

I need the ability to have multi user and have the ability to make multiple stores...does Zen's do that?

multi user - do you mean various user access level to the administrator section? If so, then yes, it has this capability.

multiple stores - Can you elaborate on this? You can create as many Zen shops as you like - will they all be run separately ? or are you looking to integrate multiple stores onto 1 database?

multiple stores are run from a single database.

That capability is not inherent in Zen Cart - I have seen this done - but... Its not something that would be recommended - upgrade paths, etc, become more complicated..
