Let say I have domain1.com hosted on server1 @ location1 and domain2.com hosted on server2 @ location2

Is it possible to use domain2.com has backup email server of domain1.com and vice-versa? Cos both have very very good uptime and are more than unlikely to be down at the same time.

just set a secondary MX record for 1 on 2 and for 2 on 1
the secondary MX need to have higher MX value so incase your lower is down it goes for the higher.

I mean there is nothing to configure at the domain2.com to explain it what to do when it receives emails from domain1.com?

Will it store them or wait untill the first domain if up and resend them??? :?

no it wont store and send email when 1 is back

you need to configure 1 at 2 and configure accounts to accept emails there and save them for future use.

use 2 pop3 servers for to connect on both and download from 1 and 2 :)
