Hi,
I am new to dedicated server things, I would like to ask some questions, hope someone could help me out.
Are there any restrictions in term of access rights?
Can you re-compile any system programs, servers or related programs?
What happen if you messed up the operating system (linux)?
What happen if one of the hardware malfunctioned, say the hard disk? Who will fix and pay for it? What happen to the datas?
What can you do with dedicated server?
What can't you do with dedicated server?

1. You can't physically touch it. And not all hosts provide a remote reboot switch. Remote reboot switch is handy if your server crashed and needs a reboot. (it basically switches the power on and off I think, very handy)
2. You can format the harddrives for all they care.
3. You will have to pay the host a large amount of money to reinstall everything for you. How large depends on the host. Read the TOS.
4. If you do co-location (ship your own server there) its your problem. If you just rent a server and pay a monthly fee usually all hardware failures are fixed and payed for by the host. Read the TOS just to be sure. What happens to the data depends on who does the backing up. If your host makes daily backups then they can do a reinstall of the data (might charge you for it, again..read the TOS) If you have to provide for backups yourself and you didn't....you're gonna loose a lot of customers.

Every dedicated hosting company will do things a little differently. As such, the answers to your questions will vary slightly from host to host.
Reading through these forums will help you learn what some of those differences are. You will also see that people with different needs like different hosting companies.
In my opinion, the best way to learn about dedicated hosting is to get a cheap server to practice on and play around with.
Who knows, maybe you'll like it enough to keep!
