If I was to use the cPanel backup feature that is built into the end-user environment what will it back up? Will it backup everything such at settings and emails or will it just backup the files?

If you do a "full backup" you should get everything -- not just your site content, but forwarders and the like as well. It is supposed to be restorable via cPanel, although I haven't tried that (and it may need to be done by the hosting provider in any case).

What I would suggest is to do a full backup and download it to your system. Unpack it and look inside; I think you'll get a good idea of what is backed up. I did this which is how I figured it out myself.
