I tried searching, but couldn't find anything that I thought answered my question clearly... so I'll ask now. Sorry if I seem confused!
I currently have one server, which is offsite, that I use for web hosting. What is the best way to perform backups since it's offsite? I'm worried about losing everything incase something happens.

Usually FTP will work fine right outta cpanel. Tranxact has it on CHEAP at $0.50 to the GB of space, no transfer fees

Thanks for the ideas... does anyone else have any other suggestions? I like to have options in case something doesn't work for me, or my budget.

You can
1. Add a second harddisk and backup locally
2. Get a second server at another/same location and FTP/Rsync Daily
3. You can download the site to where you are
4. Invest in some backup solutions (example Tape or others) and install it and backup daily.
5. Pray daily :)
