How long do you think is appropriate for when you order a dedicated server till when you get it. I thought most were 24 - 48 hours which is not too bad, but I guess my current soon to be host says < 6 days essentially.

The server is not that big of a customization job. Could they just be doing some testing for stability also before they put the server live for my use?

That all depends. Some hosts can get you up in 15 minutes because they have servers ready to go, some have to order the server or server parts & burn them in which could take days/weeks.

I guess the thing I would be concerned with is the promise to deliver; if you need it in 5 days and they say they can do it in 5 days, it should be installed in <= 5 days.
