Now may be jumping the gun, but I sent in to have my domain transfered off networksolutions to an OpenSRS registrar, and it has been a week. I don't want to pre-freak out but the domain expires Oct 1.

How long has this taken anyone else? I thought I gave this enough time, but now I am not sure...

You better fire off an email to your new registrar. It took me 10 days to accomplish a transfer, but only after an email complaining to my OpenSRS registrar. Follow up on those nameservers, too!
