Hi,
I think there is a way...

You get a response from paypal with the from address of the person that paid you... if it went to an email address that has an autoresponder then forwards to your inbox, you would be able to automatically send a thank you email....

There may be a setting within your paypal account too. I haven't looked for that info, but I know I have received many automated replies after paying by paypal.

I would think the autoresponder idea would be good though for a quick and simple way to handle it.

Yes both the buyer and seller recieve a notice when a purchase is made via buttons or ipn. They do have a really neat notification system but it for eBay related purchases. Try looking at third party solutions.
