Which is better for a web host to use, from the point of view of a client (me). From what I've read, I like Red Hat, which is what Webservepro uses, but I think it's the least popular of the two so I'll probably be wondering what I'm missing out on (once my check clears and I can actually start building my website again).

Red Hat is the more prevalent of the two. In my opinion, however, a host that is actively using Slackware has their sh** together as I'm sure you know it is a bit more cumbersome than Red Hat.

Last I knew - webservepro (had AWFUL experience with them!!!) used Slackware.

it doesn't take an OS to make a web host bad ;)

My nightmarish experience with webservepro has nothing to do with the OS they use.
Had to do with what I perceive as ethics and professionalism...or lack thereof.

I agree with Orpheus: anyone (not just hosts) who uses Slackware, especially over Red Hat, most likely has their stuff together.
Red Hat holds your hand in a lot of things where Slackware throws you into the OS environment and says "go nuts." FreeBSD is very similar in that manner.
Very rarely do I install Red Hat on a machine I care about. I install on dummy machines to see how the OS is improving, but I never install it on a production machine unless I have to. I personally stick to FreeBSD and Slack.

Slackware is _MUCH_ better (more secure, etc), however it DOES take a competant web host to run it. A lot of web hosts aren't knowledgeable enough to be able to administer a Slackware machine.
