I remember i once had this same problem... when you right click on an image called dog.gif for example... when you right click to save it instead of just naming it "dog"... name it "dog.gif" that will fix it.

This problem comes up sometimes when the "Temporary Internet Files" folder becomes very large, and can be fixed by deleting some or all of those files. You can do that in IE's "Internet Options" dialogue.

Seems like ever since I "upgraded" to XP, I have to delete Temporary Internet Files weekly to fix this same thing.

Renaming the image is just putting a bandaid on things. You still need to get the the root problem. I had the same problem, and clearing the cache worked for me.

Upgrading from any MS product is generally a bad idea and should be avoided unless you have hardware/settings for which the original software can not be found. Additionally it should be noted that WinXP is larger than its predecessors both in application and cache. Each of which require a minimum 1.5 GB

This usually happens with web sites that use a script to serve images and they don't pass the correct MIME type. A lot of pr0n sites do that on purpose (your browser will display the images correctly but you won't be able to save them as JPG's that they actually are).
This Microsoft Knowledge Base article mentions a couple of possible causes and workarounds besides the "temporary files" cache problem I mentioned earlier:

I had this same issue crop up yesterday. Clearing the cache worked. Thanks for the tip :-)
I've been through this before as well. Deleting temporary files is one way to go. As a supplement to that, evaluate your drive space situation. If you barely have enough free storage for various caches, virtual memory, etc. (things Windows users normally don't control, but that exist in abundance on most modern systems) this could be part of the problem. The first time, it happened to me, I cleared up my browser cache and got back over 1gig of drive space. This was in spite of the fact that at every opportunity I have declined the installation of the "offline browsing package" and any related features. Even today, every week or so I do the purge to get back around 50meg of space. Back in the day the rule of thumb was to always keep 5% of your hard drive free. I'm not sure if people still go by this or not, but I do know that my ME system advises keeping 250meg free for virtual memory use, and I suspect newer boxes need even more room for that sort of thing. If you definitely have a nice chunk of unused drive space and you don't have a huge bloated browser cache, then perhaps the best way to go is to switch to a non IE browser. Before I read about clearing the cache, my overcrowded system was able to harvest images through Netscape without difficulty.

Windows is fine if you keep an eye on things. You don't expect your computer to think for you do you? Windows needs maintainence. I certainly hope you don't spend any time around a Linux desktop if you're having trouble with a Windows set up as the maintainence is a lot higher on that. ;)
A computer runs only as well as the person operating it.
