I am looking for a good secondary DNS to help out on a couple of critical sites. I am looking for anonymous nameservers that won't conflict with my business. I currently run one RAQ3 with both primary and secondary DNS onboard.
Anyone have any suggestions?

I have used ZoneEdit (http://www.zoneedit.com) for the last 6 months and they have proved very reliable (zero downtime).
Also they are free for the first 5 domains and they have a very easy to use web panel. You can try them to see if they suit your needs, the price is right. ;)
I'm not sure though if it meets your anonymous requirement but at any case they do not do web hosting just dns services.
I'll be frank with you upfront: I resell DNS services for ZoneEdit at FusionServe.com (http://www.fusionserve.com ) so you may want to check it out.
If price is an important factor for you in choosing dns service, it will be cheaper to go with me but if you want to go "direct to the source" for a higher price then ZoneEdit.com is the best option.

Do these DNS services actually give the option to point to sub domains? My host charges me a recurring fee if I have a domain name pointing to a sub domain and it's getting expensive. I have a few sites and each single one does not produce that much traffic to justify a separate account - so, I have them pointing to sub domains - users don't know because it will always show the name that is pointed to sub domains - not the sub domain name.

i can do this for you for free.
easydns.com and ultradns.com are both highly reputable DNS outsourcing providers. no-ip.com is another one, but I dont hear much about them.
