We've had customers come from other hosts, but some never say where from, and we never really ask. :) It's up to them if they want to disclose that information or not. If it's good enough for the CC processor, it's good enough for me, generally. Usually I do a good bit of talking with the customer before they sign up. I trust them enough to trust the information they enter is valid -- and if the CC processor accepts it, it's fine with me.
