Hi guys,
I've got a question regarding the setting up of emails for subdomain users on cpanel. Instead of user@user.mydomain.com, can I have it set up to user@mydomain.com?
Taking into consideration that once I give that email, I expect them to stick with it and never be allowed to change it (unless I change it for them :D)

Why don't you just create an email user@yourdomain.com for them then. Sure you can do it.

I can do that using Horde, but trouble being that they require my master login to be able to get inside.
I.e. if my Cpanel account uses user1 + password1, Horde requires that I type in user1 + password1 BEFORE I can attempt to login as user2 + password2.
Any insights on this? Or should I install my own webmail software?

Default email for sub.mydomain.com -> user@mydomain.com

Go watch "Creating a POP email account", and Creating a default (catchall) email account. Except use sub.mydomain.com for the catchall.
(or checkout http://www.demodemo.com/tutorials_cpanel.html if you have a different cpanel theme)

that's not true. You can access it by going to http://www.yourdomain.com/webmail/ without the need to login to cpanel first.
