I changed my provider some weeks ago to a new one. Then I got a mail from the new provider to update our nameservers. I assume the issue is that visitors of our address get the ip of our new provider and not the old one, right?
But HOW can I update the nameservers? And where???

Find out from the registrar that currently houses your domain.

Martin,
Who registered your domain name? If it was you, or someone you know, find out which registrar they used (whether it was Network Solutions, Dotster.com etc).
That's where you'll need to change the nameservers. If the registrar has a login (most do now), just find out the username/password from the person who registered your domain name, log in and poke about for an option regarding nameservers.
You new host should have provided them to you, so it's just a matter of changing the current ones for the new ones. Poke submit and sit back and wait. A day or two later everyone should be arriving at the new host, and therefore your domain.
If you feel like telling us your domain name many of us can search for the registrar itself via a whois check and give a more detailed walk through if need be.

If your domain name was registered by Affordable Host:
You can manage all aspects of your domain name, including contact information, DNS and more here: http://manage.opensrs.net
NOTE: The login screen will ask you for your domain name, username and password. Do NOT include http:// or www. in front of your domain name.
TRANSFERRING HOSTS WITH NETWORK SOLUTIONS:
If your domain name is registered with Network Solutions, and you are trying to transfer from another hosting company to Affordable Host:
1. http://www.networksolutions.com/en_US/makechanges/
2. Enter your domain name
3. You will see a place to choose what you want to do - choose:
Transfer My Domain to Another ISP
4. Remove any DNS (looks like ns1.something.com) and IP (looks like 123.123.123.12) and add the information that we provided you with.
TRANSFERRING HOSTS WITH MOST OTHER REGISTRARS:
Most other registrars will give you a control panel to log into. Use the username and password that they give you and log in and remove any DNS (looks like ns1.something.com) and IP (looks like 123.123.123.12) and add the information that we provided you with.
