Carl,
Start out with a Reseller's account so you do not need to go bother about the nitty gitty of actually managing the server and so on. But if you do so, make sure that :-
1) Your plan is upgradeable so if you have more clients, you can always purchase more space and bandwidth
2) Your web host has a dedicated server plan so if you need to upgrade to it, you can with ease.
3) your web host is reliable and response to your queries and support tickets.
4) The plan comes with a control panel for resellers so you could use it to set up accounts (bandwidth and space limits) for your clients.
If you are unsure of the actual set up, the reseller's account is the best option. This way you do not need to bother about the server patches, configuration and so on. You web host would take care of that. Then the control panel which should come with it should let you set up the accounts for your clients.
All the best. I am sure the rest would give you more information which you need.

You might even want to get reseller accounts with more than one host. Try a Cpanel reseller, a Hsphere reseller, maybe even Ensim and Plesk, and any others that might appeal to you. A lot of hosts will let you demo the admin panel, so you can take a glance to see if you might want to look into it closer. Run a couple of your own sites on it to see how all the features work. It doesn't have to be live sites, just something you make up is fine. Putting a bit of thought into the type of software you want to use now, up front, will help you out in the long run.
