Hi,
What is the best *nix distro to use. This will be for a single site.
I have used RH for years but do not like the way they are going and the fact that they move to many things.
I have looked into using LFS, as it means I can do things the way I want to....
Any ideas?

It's not very good idea to use source based distro on server.
I believe you shouldn't install gcc and any development tools on server due to security reasons.
If you don't like RH look at ASPlinux.

Debian, Its strong, has good support. Its a *little* difficult to get used to (especially coming from redhat) but its file locations are much simpler. Plus, once you use it for a while, you are APT to love it :D
I come from a strong debian community, and we all love it. I have friends who are sysadmins and network engineers for ISP's and all their servers run Debian.
Plus, Kernel upgrades, software installs/upgrades and security patches are extremely easy!
