Is there a way to back up a client's e-mail as well as the rest of their accts...? how is that done, and is the info easily recoverable? I know there's a handle little backup feature in the cPanel, but what about e-mails?

the cPanel backup utility backs up everything, even including databases.

You gotta backup MySQL seperate though.. i think. ;)

but again, what about emails?
