Looking for someone with redHat experience to set up pop3 email service with a few email accounts and show me how to add more accounts should the need arise.

Is this plain RH? Have you looked at webmin? http://www.webmin.com Makes life a lot easier if you are not comfortable with the command prompt.

You get that control panel + web mail installed. I also will setup vqadmin which allows you to add domains.
